I would cook up a pot of rice in chicken stock or broth, then pour chili over it.

I did this for years before I retired. I live alone - it was nice to come home after work and eat dinner without working at it.

If the OP googles "Once a week cooking" or "Freezer cooking" or "Once a month cooking", they will be inundated with ideas and recipes

It is a good your family doesn't like prepared foods.

The Crockpot could be your best friend.

I also make baked fish a couple of times a week. Have everything prepped ahead of time and when he calls on his way home your dinner can be done in 18 mins. flat & on the table.

You have gotten a lot of good suggestions here from some great cooks. It just takes a little bit of planing.

My husband's work schedule changes weekly. I never know if I am making breakfast (which I don't eat), lunch can be anywhere from 11:30am-3:30pm, or dinner bet. 4:30 and 7:00 pm. I make extra so the days he is coming home early he will get the left overs.
