My MIL has had hip problems (replacement) ongoing since July. I have been the main cook off and on for months now. With Thanksgiving past, Xmas ahead and her 81st Birthday dinner for family on Sunday I am practically out of ideas. I have tried to keep menus simple and relatively healthy.

I desperately need some veggie side dish ideas - I have the typical green bean casserole, broc/rice casserole dishes. Main dish is Chicken Kiev - YUM!!

Looking for a new potato something and 2 more veggie recipes... HELP!!!
PS - NO mushrooms

Creamed spinach with some chopped up tomatoes and garlic is yummy

Oops-potatoes-cut up red potatoes and toss with olive oil, grey poupon mustard and chopped garlic. Bake 350 for 35-45 min.

Thank you all! Asparagas sounds great - but MIL wont eat it. It IS her birthday - otherwise I would make it for ME!!!!

Hope this isn't too late...

Saute 2 cloves of garlic in olive oil. Add a bag of baby spinach and let it wilt.

To that add 2 cups chicken broth and bring to a simmer. Fold in 12-16 oz of cooked orzo. After mixed add crumbled feta cheese and some grape tomatoes to the top. ENJOY

Oh and if you have any left over you can make a great pasta salad out of it. I just add some chopped veggies, basalmic vinegar, olive oil and chill for a few hours.

Buttered new redskin potatoes with a little garlic etc.

Au gratin or scallopped potatoes.

Potatoe skins with cheese and bacon and sour cream.

Sweet potatoe casserole or just plain baked with a little brown sugar and cinnamon

Some kind of rice pilaf or fried rice

Baked acorn squash with butter and brown sugar.

Green bean bundles. See below.

Fresh green beans slow cooked southern stlye with ham or bacon .

Cooked carrot medalions with a little butter and brown sugar. Carrots are overlooked as a side but theyre really good.

Southern Corn. I already posted a recipe.

PotLuck Corn Puding

Some kind of greens fried with a little bacon.

Brussel sprouts.

Sugar snap peas. Peas with little onions. Any kind of peas.

Creamed tomatoes.

Tomatoes with okra and green peppers etc . Cant think of what its called.

Some kind of soup like broccoli cheese.

Some kind of dressing. Chicken is good with dressing.


Hows zat. I gotta quit Im getin hungry.







Green Bean Bundles

2lbs fresh whole green beans cooked tender crisp
6 strips of bacon partially cooked.
Garlic salt
1/4 cup melted butter
3 T brown sugar

Gather 10-12 whole green beans in a bundle and wrap with a bacon slice. Place in baking dish and sprinkle with garlic salt. Drizzel with melted butter and sprinkle with brown sugar. Bake 350 for 20 minutes until bacon is done. makes 6 servings.
