I use most of these while camping, but the nephews and nieces loved cooking these in the backyard when they were younger.

I always use Heavy Duty foil and spray with Pam or thinly coat with oil. And never be stingy with the size of the foil square! Sometimes I double wrap them, depending on how 'soupy' the recipe is. Don't fold the foil up tight - leave room for steam expansion.

Always looking for new 'foil recipes' for the campfire or BBQ ... Anyone??

Ground Beef 'n Veggies – The Old Stand-by
Aluminum foil – Hamburger patty (or small meat balls), onion, carrots, potato, whatever (slice all veggies thin) salt, pepper.
Cook for about 30-45 minutes

Chicken
2 large boneless chicken breasts (You can also use pork chops)
2 large red onions sliced in thick slices
2 med potatoes sliced in medium slices
1 small bag frozen California mix (broccoli, cauliflower & carrots)
Salt, pepper, garlic salt, butter
First onions, then potato, then veggies, then meat.
Seasonings and butter on top.
Cook for about 45 minutes.

Chicken #2
1 boneless chicken breast
½ cup baby carrots
½ cup cubed potatoes
¼ of an onion, chopped
3 Tbsp Italian dressing
1 Tbsp butter
Seasonings to taste
Buried in hot fire ashes for approximately 45 minutes.

Steak Hobo Dinner
2 - 3 steaks, cut in 1" cubes
1 onion, sliced
2 potatoes, cut in 1" cubes
8 Tablespoons butter
Layer 1 T butter, potatoes, onions, S & P, 1 T butter, steak.
30-45 minutes

Chicken, Mushrooms, Pineapple
4 chicken boneless skinless breasts
1 green pepper chopped
10 mushrooms chopped
8 ounce can pineapple slices, drained
Layer mushrooms, peppers, chicken, pineapple, S & P
15-20 minutes, flip package for another 15-20 minutes

Foil-Pack Chicken Fajita Dinner
1-1/2 cups instant white rice, uncooked
1-1/2 cups hot water
1 Tbsp. Taco Seasoning Mix
4 small boneless skinless chicken breasts
1 each green and red pepper, cut into strips
1/2 cup Thick & Chunky Salsa
1/2 cup Mexican Style Finely Shredded Taco Cheese
Fold up all sides of each of 4 large sheets heavy-duty foil to form 1-inch rim. (Easier way - I put the foil in a small bowl to prevent sloshes)
Combine rice, water and taco seasoning; spoon onto foil. Top with remaining ingredients.
Bring up foil sides; fold to make 4 packets.
Cook 30 to 45 min. or until chicken is done

Barbequed Chicken
4 boneless, skinless chicken breast halves
1 cup barbeque sauce
1 can whole kernel corn, drained
1/2 cup chopped green pepper
Set 1 chicken breast half on each piece of foil.
Spread about 1/4 cup barbeque sauce on top of each chicken breast half.
Spoon equal portions of the corn and green pepper on top of sauce.
Medium embers and cook for 30 -45 minutes or until chicken is fully cooked.

Beef stew cooked in the fire
1 pound beef,cubed
4 slices bacon
4 tomatoes
1 cup chopped onion
2 potatoes cubed and sliced
2 carrots cubed and sliced
beef granules, salt, pepper
Vegetables first, then put the meat on top, then seasonings.
Bury the foil packs in the warm coals and cook for 40 to 50 minutes.

Roasted Vidalia Onions
Large onion, cut out the core.
Fill up onion with butter, salt and pepper and wrap in foil.
Buried in hot fire ashes for approximately 45 minutes.

Potatoes in Foil Packets
2 large potatoes or more, cubed
1 diced onion
Diced Ortega chiles
Sliced bell peppers
Mix everything together.
Place a hand full of the mixture in the foil and season to taste.
Then take the 4 corners and pull them up and twist into a Hershey's kiss shape; seal TIGHT
Place on the coals; usually it will take 30 min depending on the size of the potato cubes.

Baked Apple
Core a good sized apple, but don't go all the way through.
Sprinkle with cinnamon, sugar, raisins, and a pat of butter and more sugar.
Wrap, twist the top of the foil, and cook until soft - about 15 minutes.

For a while in the Seventies, EVERYTHING was baked in a foil packet -- watery grey meat, potatoes and other roasting veggies, fish -- but we always used the oven.

Seriously?

Thanks BTW for the baked apple recipe -- I wouldn't have expected them to cook that fast by this method. I'll have to try it sometime...

Reynolds foil sheets are precut and perfect for cooking, grilling, eating on the go... no cutting or tearing needed!

Ridiculous, huh? Sheesh.

Apples - I use small ones because if any aroma leaks out of the packet ... I want to eat it now.

I do remember wrapping corn on the cob with butter....in foil for cooking on the coals....(I know that left in the husk would do the same thing....but the foil made "they are ready"...so much easier......

I also remember doing potatoes the same way.....and the burned parts were delicious!

My fav camp fire cookery was hamburg or hobo stew....but that did involve a pot and no foil.

For heaven sakes, why would you deprive the salmon of some good grilled flavor???
