I was using up random stuff I had. A zucchini, yellow squash, and a half bag of fresh spinach. I also had a half of a block of feta. Hubby got a free bottle of organic dressing they were giving away at the store. Smoky tomato vinaigrette.
I combined all of the above with salt/pepper except cheese, roasted till tender then added cheese and roasted for another 10 minutes. Wow, it was actually better than just edible. I don't know if I would purchase the dressing but if I make it again, I would add some diced tomatoes and some apple cider vinegar/olive oil.
