Monterrey Jack is made to be used in Mexican cooking. Give that a try.

If you want something similar to a pre-made enchilada, those are often made with a cheese sauce instead of grated cheese. You can buy canned cheese sauce made for nachos and that might do what you are wanting.

We use a Tillamook Sharp Cheddar and Jack mix, freshly grated of course.

Lots and Lots of ooze.

My answer was going to be use a high quality block of cheese ... and Tillamook brand fits that description.
Always grate just before use.
