I did notice that some of the recipes used a lot of produce--onion, green onion, celery, pepper. Some used three of four binders. One recipe used egg, bread crumbs, flour and cornmeal.
You make a good canned salmon patty like you make a good canned tuna patty...eggs, corn meal, fish fry, onions, mayonnaise, and the whole can with the oil or juice. My neighbor makes delightful tuna patties, and they are good for college students or people on a budget...yum!
I use mayo, yes, potato and I put them in the fridge for about an hour before cooking them. I got my recipe from the food network: Melissa ($10 dinners) I have been using it since she first did a program on it about 6 years ago I guess. It is the only one I have found that really suits us perfectly. Of course I don't have to look it up all the time anymore, but you might want to give it a quick look.
Your mistake is using canned salmon, which bears only a vague resemblance to salmon. Try Costco's Trident brand salmon patties in the freezer. Our family loves them and they only take 10 minutes in a toaster oven.
My friend gave me a recipe frpm the Kraft website that included boxed stuffing mix, mayo and shredded cheese among other things, it was very good considering. In any case, avoid store bought bread crumbs, they are awful.

I'll do that. There just seemed to be something missing and I couldn't put my finger on it.

There's an evil can of store bought bread crumbs lurking in the cabinet, but I try to not use them. I don't eat a lot of bread or crackers, so sometimes I need to use a little bit.
