3 sweet dumpling squash cut in half, seeds removed or Acorn if you can't find dumpling.
1 butternut squash cut in half seeds removed or buy them already cubed
4 large carrots peels and cubed
1 large onion chopped
1 head of garlic
1 tsp. salt
1 tsp. pepper
2 cups vegetable broth
3 stalks celery chopped
1/2 tsp. nutmeg

You will need at least 3 baking sheets

Place squash on a baking sheet skin side up, drizzle fleshy part with EVOO before place on pan. Place remaining vegetables on separate sheet pan. Drizzle with EVOO Tsp. salt and Tsp. pepper, Roast 1 hour on 400 degrees or until vegetables are tender but not mushy. Squeeze the garlic out of the bulb. Puree all veggies in food processor until smooth. You may have to do this in batches. Add to stock pot and simmer until it slightly boils. Add nutmeg at the end and stir. Curry powder might be a nice addition as well.

My neighbor made this today and gave me some. It was delicious.

Thst sounds great! I make my own vegetable broth using those ingredients (butternut squash, though). When I strain it, I slice the carrots and toss them into the broth along with some of the squash. Occasionally, I'll add some rosamarina to the broth. It's very versatile.

You can't beat those veggies for nutrition, especially this time of year!

I love to,roast veggies , I like to add parsnips & turnips , feels like I'm eating potatoes . I do them in batches as they tend to just steam if too crowded
