I have made my share of carrot cakes, and this recipe is a keeper for sure! With nearly 5,000 reviews, giving it as high a rating as it gets, I guess I am in line with the others on this one!!!
I demand that carrot cake have pineapples in it. I have made the Sam's Famous Carrot Cake from the recipe referenced above and it is very good.
My notes on the recipe say to cut the sugar to 1 cup and the oil to 1/2 cup - but I don't like too-sweet cakes. My notes also say I have made this in a 13x9 pan and in two 9" round cake pans. (This is why I add notes, because I can never remember what I have done before.) It would have been good if I had noted what the baking times were for the very different sizes, but, alas. Obviously the two (" round pans bake faster.
I use a recipe of cream cheese, whipped cream, lemon zest and melted white chocolate for the frosting.
