I tried this recipe just now minus the mozz. (I forgot it!) and no almond meal.

And it was really tasty. I have to tweak the seasonings for my taste when I make it for myself. I made this for mom and she loved it.

I've tried it and although the taste was good, the texture is NOT like regular crust. I could not pick it up like a piece of pizza. I did dry it very well as the instructions say. I could try it again and maybe I am doing something wrong? Maybe if I can use a salad spinner to dry the cauliflower? Also the sauce and cheese will affect the moisture content of the crust as well.

I think the mistake that comes into these alternative recipes is that people want it to taste very close if not the same as the original. It won't happen.

Instead I view these recipes as a twist to the original. And addition to the original, not replacing the original. So in this recipe, I am looking for something to hold up the sauce/cheese/toppings and tastes good. I am not looking for a doughy, yeasty chewy delicious slice of pizza.
