I love making desserts that go together quickly. These sable cookies are really great, simple sugar cookies. They have a nice sandy, crunchy texture and the basic dough can be made in 10 minutes.
Sable Cookies
2 sticks (8 ounces) unsalted butter, softened at room temperature
3/4 cup sugar
1/2 teaspoon salt
1 teaspoon pure vanilla extract
2 large egg yolks, preferably at room temperature
2 cups all-purpose flour.
Cream butter, sugar, and salt. Add in vanilla extract and mix. Add egg yolks. Add flour and mix until just incorporated.
Shape dough into a log, wrap in plastic and chill for a couple of hours to firm up. When ready to bake, preheat oven to 350 degrees. Take the dough log and slice into slices (thin or thick, up to 1/3 inch). Place slices a 1/2 in. apart on a parchment lined cookie sheet and bake for 13-15 minutes or so. You want to bake until the edges just begin to start to brown. Remove from the oven, allow to cool, and enjoy.
TIPS:
1. If you use salted butter, omit the salt in the recipe.
2. You can add in chopped pecans or even better, chopped dried strawberries.
3. For fancier cookies, the edges of the raw cut cookies can be brushed with egg wash and dipped in clear or colored sanding sugar. Bake as usual.
3. Dough will stay fresh in the refrigerator for 2 weeks or if frozen, will stay for 3 months.
