I have some lime juice that I want to use up. About a cup's worth.

Can you give me any recipes that use it?

Any at all? I love to experiment.

I just made a key lime cheesecake which you can use regular lime juice for. It was pretty good:

Bistec de Palomilla. It's a Cuban recipe that is delicious. The lime is added to the beef steak at the end.
(I add some while cooking for extra kick)
If you're into trying something different, this is really delicious, imho.

I'd be making Mexican. Salsa and guacamole... For the salsa I use chopped tomatoes, chopped onion, jalapeno, cilantro, white vinegar and lime juice, salt and pepper. I also use lime juice in my guacamole. About 1/2 a lime per avocado, with 1T mayo and 1t. of chili powder.

OR, you can make some Gimlets, and call it a day LOL.

Many Spanish themed recipes will call for lime as mentioned above. You can google vaca frita or Cuban pork recipes. But for that much lime juice (and hopefully fresh squeezed and not bottled) you can make a "key" lime pie too. Just add 1/2 cup of lime to a can of condensed milk. Mix till thickened and pour into a graham pie shell and chill at least 4 hours. Top with whipped cream.
