I throw Avocado and aromatic vegetables/spices/herbs into a food processor with some lemon, and maybe bread crumbs or matzo meal, and make various vegetable mousses. Poured into ramekins, they set up nicely, in the refrigerator.

Avocado is a natural for pasta. I've stirred it into hot pasta dishes after cooking, and into pasta salads. I got chummy with an off-season NFL player at the gym, and got him started adding avocado to pasta. He found it quite a revelation, for some reason. I like adding capers, when I add avocado to pasta.

Now mind you, I switch this up to fit my lifestyle.....only alittle.

Chocolate Avocado Mousse

1 lrg avocado
1/4 c.raw cocoa powder ( i use unsweetened )
1/4 c.coconut or almond milk ( i use almond)
2 tsp stevia ( i use 1 packet sweet n low)
1 tsp vanilla

It says to puree avocado till smooth, mix cocoa pow. & milk till combined, & add to avocado
Stir in stevia & vanilla.
Top w/slivered almonds (yes) or berries.

* I just dump it all in the blender at the same time-will need a spatula to remove-trust me! lol

My father just peeled it, sliced it up and just put salt and olive oil on it, we ate it as a side veg with dinner, I love it.

I mostly only use avocado to make California roll sushi, it's so hard to know when they are perfectly ripe

Today I did jacket potatoes for dinner - mashed up half an avocado with creme fraiche, added cold roast chicken, feta, and chives and used that as a topping for the potatoes. Delish!

Cream pie. Just use vanilla jello pudding and blended avocado. Some people sprinkle sugar on half avo and eat with a spoon.
