A locals store had a very good sale on extra large, extra nice avocados. So I bought 6 of them.

I'm sure you see where this is going. All six came ripe at the same time so I am scrambling to use them. I served Dungeness crab with avocado. Last night we had bacon avocado sandwiches. Tonight it is nachos with guacamole. Maybe I can do a duck and avocado taco. That still leaves avocados to be used.

What do you guys use avocado for? I need ideas.

Slice an avocado, slice up a nice firm tomato and slice part of a peeled cucumber, put them in a bowl and toss with a tbsp of sunflower seeds and bacon bits, add a bit of Ranch dressing. It makes a nice salad.

I've seen it where people spread avocado on toast with a little salt and then they chow down on it. I keep meaning to try that. Here is a recipe for chicken salad with avocado that is really good.

I''ve been eating them for breakfast. Peel, chop roughly, sprinkle with salt , pepper and lemon or lime juice.

Guacamole freezes well too. Just squeeze a little lime juice on top and place a piece of plastic wrap over the top before sealing it up. If you get tired of eating all that avocado at once, this might be a good option.

Spread on a toasted bagel, with or without cheddar.

Mash some blue cheese and rice vinegar together with a fork, pour in avocado half, eat with spoon.

We use avocado for guacamole and slice it to put into a salad or slice it and eat it.
Pretty mundane and boring but we like it.

Slice or spread some on whole grain bread, add some sprouts and turkey...
Makes one of my favorite sandwiches..

make guac and freeze it. It will be fine.

Also, it makes a killer cupcake icing. Just google up vegan chocolate frosting.
