I've been changing my diet to include more proteins and less carbs + sugar these past few months. I've always had a thing for tuna, so would end up getting the 6 pack tuna from Costco. After much research, I realize that too much tuna and its mercury will cause detrimental effects to your body and linked to all kinds of problems. So I've been looking for alternatives and on an unplanned trip to costco, I walked by the canned tuna aisle, came across Kirkland Trident Wild Alaskan Pink Salmon. I decided to pick some up without thinking too much since I was in a rush trying to get out of the store before they close. I hate being one of those customers that make all the other employees stay late because i decided to just walk on in a few minutes before they close. Anyways, I come home and realize I have no idea how to properly eat, cook, or what canned salmon would even taste like, let alone 'pink' salmon.

Anyone here have any suggestions on how to eat these? Posted some pics of the actual product.

The only thing I've ever done with it is make salmon croquettes/patties, but that would go against your low carb plan.

My first choice is croquettes. However, I also eat it mixed with malt vinegar, or I make a salmon salad using pickle relish, hard boiled eggs, and Miracle Whip.

I have drained canned salmon and used it just like tuna. Mixed a little mayo, pickles, in a salad or sandwich.

Patties. Mix the can salmon with mashed boiled potatoes, seasonings and fry or bake
Or
A tuna or salmon loaf.

Canned salmon has a taste very different from either fresh, smoked, or cured salmon. I've learned that the best way to eat it is as it comes from the can. Cooking canned salmon offers nothing. I've tried mayo, sour cream, and several salad dressings, but I've found that the simplest is the best. If you wish to place the salmon on a bed of lettuce with a couple of cherry tomatoes, you can then drizzle fresh lemon juice over it with perhaps a sprinkle of fresh cracked pepper. You'll have a pleasant light luncheon, late supper, or other meal.

Do not use canned salmon in an omlette or scrambled eggs; the result is horrid.

Brands vary greatly in taste; some are very inferior. I prefer red sockeye salmon to pink. My favorite brand is Bumblebee.

I have never bought canned salmon that was boneless, and those are the smallest cans I've seen.

What they said^^^^^^^^But canned salmon is a far cry from fresh. Personally, I can't stand it. I'd rather eat sardines, which are also considered healthy.

I use the Costco canned salmon to make low-carb patties/croquettes.
I drain a can of salmon and put it in a bowl, add a beaten egg. In lieu of the traditional cracker crumbs, I add enough Costco Signature Dried Chopped Onion to make the mixture the right texture for forming patties. I like to add a couple of tablespoons of Costco Signature Crushed Red Pepper flakes to the mixture.
One can makes 4 croquettes.
I saute them in coconut or olive oil, about 4 minutes on each side. You could probably bake them but I've never tried it

You can eat them hot in a meal with vegetables on the side, but one of my favorite things to do is to let the croquettes chill in the fridge and then crumble one over a salad. Yummy.
