I haven't made this yet, but it looks good to me. Anyone else think they might like this? I'm including a link, because I think you'd have to see this to believe it.

The onion is filled with spinach, cheese, and bacon, but I think I would add in some mashed or baked potato and maybe even some cooked hamburger.

Oh, my goodness. I love onions and this looks so good. I don't think I would add anything, but maybe serve it with mashed potatoes and some meat. I have made large vidalia onions with just a scoop out of the top, a pat of butter, and a tsp. of bouillon granules stuffed in there and wrapped in foil and baked. So good.

I've never made these, but I've had them, or things similar to them. Spain, I think.

Other cheeses work well, as does procioutto or seranno ham instead of the bacon. I'd pass on the mashed potato, but maybe some ground beef or, better yet, ground sausage (leave out the bacon if you use sausage.) Gotta be sweet onions.

that's the last time i've seen a recipe for stuffed onions. i'd completely forgotten about them.

My wife does Vidalia onions this way. Large onion cut in half. Mix equal amounts of ketchup, honey and spoon some on to each half. Put a pat of butter and microwave for about 5 minutes. Works for us.

I saw a picture of something like this years ago except I used brie (refrigerated then cut into little cubes so the rind bits would be well distributed) diced pears, and pancetta cubetti.

Also, be on the lookout for baby Vidalias this time of year. They are sold with the green tops and are great drizzled with olive oil, sprinkled with salt, and grilled.
