3 Tbsp. salted butter
1 cup milk
2 cups shredded cheese- I use cheddar jack or just yellow cheddar
2 Tbsp. flour




Make a roué, melt butter and add flour whisking until it gets golden brown. Add milk and keep whisking to get rid of any lumps. Add cheese and stir until smooth and creamy. Pour over broccoli or cauliflower, add some bread crumbs on top and bake 15 minutes on 350 or skip this part and just pour the cheese on top and eat it. I also use this same cheese recipe for macaroni and cheese but I double it.

It's a fairly common technique - Béchamel sauce with cheese. It's also how you make a great mac-n-cheese. The roux is the key to the sauce.

I add one drop of red and two drops of yellow food coloring to my cheese sauce. (Be careful!) If it looks the color of the cheese you are using it will taste cheesier.


I also add a teensy pinch of cayenne pepper to give it a tiny "bite."


Thanks for the reminder. Couldn't you just live on this stuff?

My recipe is similar - I use corn starch to make the white sauce- 1 TBSP with a cup of milk. Good alternative for anyone who is gluten sensitive.
