Looking at recipes for baking home made sweet potato French fries, they all say coat in oil.

I don't want to add all that fat. Is the oil needed to help them bake or something? How will they come out if I just cut em up and bake them plain?

They will come out just fine if you just bake fhem. They will be sticks of baked sweet potato and not french fries. French fries are deep fried potatoes and you can't deep fry without the use of oil. But your sweet potatoes will be good.

You only need about 2 tsp for an entire tray (9 by 13). It's not that much, if you're worried about use 1 tsp. It makes a difference in the texture.

Maybe parchment paper or foil will give you a nice result. Even a canola spray to your pan or lining may alleviate sticking. Basically you are baking your sweet potato fries. Doing so will offer a nice side with no oil added.

Either way try a light sprinkling of chili powder, cumin, garlic powder and s&p. Very good with sweet potatoes.

Does anyone else remember Oprah's former chef, Rosie's baked French fries?

As I remember, you just toss potatoes in egg whites until coated and roast on a sheet in the oven, turning a few times. I think you spray the sheet with Pam.

I made them a few times and they were good. I don't see why it wouldn't work for sweet potatoes too.

I just looked it up, and you bake it at 400 degrees for 30-40 mins. Turning several times during the cooking.

As others have said, though, a few tablespoons of olive oil, spread over 4-6 servings is neglible fat.

When yams cook, the high sugar content will result in a sticky discharge that will stick to the pan (and taste wondefful). I suggest that you invest in a silicon baking sheet if you want to bake sweet potato fries. They will come right off the silicon but might stick to a metal cookie sheet.

Or you could use an oil-less fryer. I've never used one so I don't know the details. They start around $80 which is expensive IMO. I think they still use a small amount of oil?

I would just put them on a cookie sheet and line it with foil. They are going to stick so check them and move them around so they don't stick bad or spray pan on the cookie sheet.
