Im asking on behalf of my mom. she only speaks spanish so preferably in spanish.

I'll give you an easy one. Take a pork butt. Salt, pepper and cumin on the outside, then brown it in oil. Dump it in the crock pot with 1-2 cans Rotel (you decide how hot) using very little juice, some chopped onion and a bit of beef stock or beef broth. Salt, pepper and more cumin. Cook for about 8 hours on low, then shred. Amazingly easy and Amazingly good.

I've cooked a similar dish that is not Mexican.
Take a pork butt, sprinkle with MSG, black pepper, and a small amount of salt, then brown it well. Place it in a crock pot with a can of Sclafani Whole Peeled Tomatoes including the juice. Add three or four large garlic cloves minced, a small onion chopped, and two large bell peppers chopped. Give it six to eight hours on low. Substitute beef, add beef stock or use Lipton's Onion Soup, and you have a very tasty Swiss Steak.
Sclafani tomatoes, grown in New Jersey, are the absolute best. If I need crushed or sauce, I put them in the Cuisinart for a few seconds for crushed and a couple of minutes for sauce. Drain the juice before doing this and add it back after processing.
