My husband got some ground chicken to use in a sort of kefta formed kebab but changed his mind because we are out of eggs. I told him to freeze the ground chicken last night...he did not. So now I am going to have to use it today and push off the meal plan I had prepped for. That food can sit another day in the fridge just fine but I don't like to keep ground meat long so it's at the point of cook or toss.
Thing is I don't usually work with ground chicken. I'm hoping not to make a taco or chili dish with it. I'm coming out of being bean-overdosed and just not ready for more beans! We are a dairy free household (no milk, cheese, butter etc). Currently there's no egg to act as a binder anyway.
So I'm looking for ideas. Our pantry is pretty well stocked. I'm looking for ideas on what others do with ground chicken. If it includes pita bread- but no hummus- that's a plus but not necessary.
chicken larb. It's a thai dish. To really do it right you need sticky rice and toasted rice powder which may not be easy to find depending on where you live. But I've omitted the rice powder and served with jasmine rice and it's still great

Freeze it in portions to add to beef for hamburgers.
It is bland so it needs a lot of spice. Make water crepes, fill them with chicken/spice/tiny diced vegetables and bake in the oven. Slice and use in soup.
I would just make a stir fry with veggies, garlic, onion and whatever spice profile you prefer, and saute it, adding the chicken at the end. You could even eat that rolled up in pita, easy!
