3 different options i can pull out for quick nights;
clam marina sauce over pasta
stirfry with my homemade sauce with chopped chicken thighs and fresh bag of veggies
or broiled salmon with mustard and sweet chili marinade and fresh peppers along a bag of steamed green veg
Easy/Cheesy Casserole:
boil a pot of water, add 1 1/2 cups of raw elbow macaroni, cook according to directions, drain, put aside.
Add a can of mushroom soup to the pot (no milk)
a can of chopped ham, chicken or tuna,
1-2 tbsp butter or margarine,
one stalk of celery finely chopped, some red pepper chopped (optional)
grate some cheddar cheese (about a cup).
Heat the soup mixture on low until bubbling, then add the cooked macaroni back into the pot and stir until well mixed. Yummy and quick.
Brown a bag or part of a bag of Ore-Ida cubed hash browns in a large skillet, along with some cut-up yellow or red peppers. When almost done add a sliced Hillshire Farm Smoked Sausage which comes in a large variety of options - beef, turkey, chicken, Cajun, and others. It will brown fairly quickly and then a filling dinner is ready!
I have A couple: summer time: a huge garden salad topped with chicken strips or tuna
winter; take home made soup out of the freezer, heat it and have a chees sandwich on the side.
and my favorite; in a hurry and tired; grab a frozen pizza out of the freezer, doctor it up and pop it in the oven.
