These past few days, I have been hooked to make and eat zoodles. Here is my favorite zucchini recipe:

Ingredients
3 zucchini

Grass fed hamburger meat
2 cloves of garlic
Mushrooms
Handful of pitted black olives
Chilli flakes
Tomato sauce
Olive Oil
Parmesan

Easy and delightful sounding. If you use cheddar instead of velveeta, does is need to be shredded and does it work as well? I'd prefer the cheddar, but sometime velveeta just combines more easily.

Either way, sounds so good!

My pastor's wife eats a gluten free diet. I think I'll pass thisa one on to her.

It's hard to find a summer squash/zucchini dish that does not involve bread crumbs.

I too use zucchini in curry. I make a Thai-inspired Crockpot chicken, potato and zucchini curry that is great. Unfortunately, I don't have a recipe or a website for reference but a Google search will provide some recipes.
