My SO makes an amazing chili. He uses fresh chiles and makes his own chili powder by grinding a variety of dried chiles. He usually braises short ribs for the meat.

I make different types of of chili, but always with beans. DH likes half lean ground beef, and half Italian sausage. And I sometimes add a can of refried beans, too.

I never make it the same way twice. Depends on what ingredients I have on hand... And I don't measure anything.

I will put corn in, if I have some.

More often than not, I will add a bit of cocoa powder.

I've put corn in chili.

My latest discovery is putting green tomatoes in my chili, especially white chilli. But I would put them in regular chilli too, giving them enough time to cook and break down. I like to add the juice from a can of chilis in adobo (chipotle) for a nice smoke flavor.

I put onions and chipped celery in all my chilis, and sometimes green peppers, which are really good. Of course a jalapeno, added and cooked thoroughly will add just enough burn for most of us. I will also add some good quality canned tomatoes, but I don't like a real tomatoey chili.

If using hamburger meat cook it and drain the fat before putting it in the pot of chilli ingredients,failure to do this will leave an unappetizing layer of grease on the top of your chilli.

I think I'll leave out the corn next time I make chili. It didn't really add anything and was kind of a waste of perfectly good corn.

Making my first pot of chili in a couple years. Saute ground beef in coconut oil, chopped onion, add a almost can of kidney beans and maybe half can of tomato sauce....open a couple capsules of cayenne for the hot chili I like. Cook away and enjoy.

I think I've thrown corn in it before.

I kind of make an everything-but-the-kitchen-sink type of chili:

Ground chuck/beef
Beans
Red and green bell pepper
Onion
Tomatoes
Jalapeno
Chili powder
Cumin
Garlic, fresh and powdered
Cayenne
Salt and pepper, of course

Garnish:

Cilantro
Cheddar
Sour cream
Sometimes tortilla chips or crumbled taco shells

Optional:

Beer
Zucchini
Hot sauce
Lime
I've tried a little pickle relish
Beef broth
Bay leaf
Oregano
(Kitchen sink...)

I put very little ground beef in my chili, but lots of beans! Pinto, light red kidney, dark red kidney and white cannellini beans. Tomato sauce, salsa, tomato and green chili, celery, sweet peppers, onion, garlic. I make my own spice blend as well. My chili will warm your heart!!!
