I am kitchen experimenter. Today I felt like beef stew or curry, but I am on an elimination diet, so I can't eat potatoes or tomatoes or chiles. And these are three ingredients that show up in all of my braised beef staples.
I thought about what would eat least leave me a meaty and tasty sauce, so I picked a few spices (cumin, coriander, allspice and sumac), some aromatics and coconut milk and hit go!
It is simmering to thicken up, but smells good. I haven't tried this combo of ingredients before, but it sounded promising to me. I try all sorts of things, but as a result I have few staples.

I seldom create recipes from scratch, but I frequently take recipes off the internet then "do my own thing" with them.
Tonight I decided to try stuffed portobello mushrooms, so while we were at the store earlier I got the large mushrooms, sweet Italian sausage, and California garlic bulbs.
Those are the only things the recipe called for that I actually used. Everything else, including the topping (grated Parmesan cheese instead of panko bread crumbs), was made up as I went along.
My criteria for a good do is "No left-overs!" We achieved that tonight.
I frequently create my own recipes and most of them turn out quite good. A few flops but not many. My mom started teaching me to cook when I was 7 and I've always loved it. There are times now when I look back and think that I should have gone to culinary school.
Everyone creates their own recipes. They may not realize it. Even if one begins with a written recipe, people will change ingredients enough to the point where it's a completely different recipe.
with the exception of baking I consider recipes to be 'this is what I did -- now you try' suggestions. When using a baking recipe I have found it best if I follow the instructions pretty closely -- maybe just change around the spices a little
Personal recipes are born from a combination of 1) what's in the fridge that I need to get rid of before it has a chance to spoil, and 2) what's in the freezer and cupboards that I could reasonably decide to combine with that stuff. Sometimes the results are good.
Well, some of us appreciate leftovers, as they provide flavorful and nutritious lunch options.
True - I just cooked over twenty pounds of chili yesterday, god forbid if we had no leftovers!
