Hubby brought home about 3-5 lbs of fresh-cought redfish fillets tonight, a co-worker gave them to him. They look lovely.

Looking for some ideas for cooking it.

Not sure if he brought you Red Snapper or red drum fish ?

Here is a simple recipe for either ....

If you have some basic cajun / creole seasoning powder just use that instead of the multitude of ingredients shown here.

DO NOT over cook them. They should be fairly thin filets and will not take long to cook at all.

Red drum is commonly called Redfish.

As for recipes, there are many. Grilled, baked, sauteed, ceviche.

It depends on your preference.

I like it crispy on the outside, soft and tender on the inside so my favorite is grilled.

You can achieve something similar in a cast iron pan. I like blackened as well.

Soooo many ways.

Google for recipes.

Years ago when I caught a lot of redfish I would grill them over charcoal and then make a cracker spread with cream cheese.

Fish tacos! Marinate for a bit (not too long unless you want ceviche) in lime juice, minced onion, jalapenos, a bit of garlic, canola oil, and salt and pepper. Make a red cabbage slaw with the same plus chili powder, cumin and cilantro. Pan fry the fillets for a few minutes per side, slice and serve on warm corn tortillas with some slaw and salsa verde (you could also use red; I just prefer tomatillo-based salsa with fish).

Does anyone remember the "Blackened Redfish" craze? The redfish population really took a hit when so many restaurants had this item on their menus.

Yes, and grouper as well. Trends can rake havoc on wild populations of wildlife.
