I made a big bunch of potato skins for a party last night, and now have a big pile of baked potato guts. The obvious is mashed potatoes but a) I'm not a huge fan and b) we'd be eating mashed potatoes for days.

So - other ideas? Can I make the mashed potatoes and freeze them for future use?

Shepherd's Pie? No thanks. I'd rather throw them away.

don't diss my favorite comfort meal, shepherds pie I guess you could make some hash browns, maybe do a search on how to freeze them.

Freeze them (perhaps portion them out first in snack or sandwich sized ziploc bags) and use them to thicken soups.

Also, Senate bean soup uses mashed up baked potatoes and is DELISH!
