Ingredients:

(1) 3 lbs. Salmon (half-frozen)
(2) 1 Small Head Red Cabbage
(3) 2 Carrots (Medium)
(4) 8 Tomatillos ( Husked and Cored)
(5) 8 Springs Cilantro (stemmed)
(6) 3 Jalapeno Peppers
(7) 1 Spanish Onion
(8) 1 Lemon
(9) 4 TBSP. Mayo
(10) 1Granny Smith Apple
(11) 2 TBSP. EVO
(12) 1 TBSP. Sugar
(13) 2 Cloves Garlic
(14) Salt
(15) Black Pepper
(16) Tortillas
(17) 1/2 Cup Water
Method:

(1) Slice Salmon into 1/4 in by 1 in strips. Squeeze 1/2 lemon for juice into bowl and toss fish strips into bowl for quick marinade (5mins or unti completely thawed).

(2) Heat Cast Iron skillet and pour EVO into it.

(3) Salt and Pepper Salmon after removing them from bowl. Add salted Salmon to heated skillet. Saute each side for 2-3 minutes...Reserve for later.

(4) Use grater to grate cabbage and carrots for making slaw. Dice Apple , 1 Jalapeno Pepper, and 1/2 Onion. Combine all (4) ingredients. Add Sugar, Mayo and Stir thoroughly. Slaw is now complete.

(5) Now blend Tomatillos, Garlic, Jalapenos, and Cilantro after adding water. Decant blender Salsa contents into bowl.

(6) Heat Tortillas and lay flat onto a plate.

(7) Fill Tortillas with Salmon strips, slaw, and salsa.

(8) Enjoy

Add juice of other half of lemon to slaw before stirring.
