I don't eat organ meats but my DH loves them. I rarely buy them and cook them because I find them unappealing. That being said, here's what DH bought online from white oak pastures farm in Georgia. BTW all of this is grass fed.
Most of what's on the list we know how to prepare and cook like the liver, gizzards and Tounge ( made tongue once). My DH wants to know if there are any recipes or ways to cook the Beef hearts and Lamb testicles. Thankfully his brother also likes this stuff and his mom would try most of it. Most likely they will be cooking these at his moms. I know I sound very critical and insulting so forgive me but I did not grow up eating this type of stuff and it's undesirable to me.
The other reason for getting this stuff online is it's very difficult to get here on Long Island. Beef liver, Chicken gizzards and livers are easy to get. I called several butchers to get the spleen and they said they don't carry it and refused to special order it. My husband likes this Sicilian dish called Vastedda. Which is basically a spleen sandwich on a roll, with fresh ricotta and Caciocavallo cheese. When we go to Brooklyn DH usually gets this at a place called Joes of Ave U.

Well...wow. I've never had a problem with liver or gizzards, though gizzards are chewy. I've eaten tongue, but it was thinly sliced at a deli.

Do you get A Chef's Life on your PBS station? Sometimes organ meats & undesirables are covered in an episode. She's also got a cookbook. That's where I'd look, first.
I eat all that regularly except for testicles and spleen. Yeah, cow's-tongue is just delicious, but the price of it now, just cannot justify buying it.
Cannot comment of cooking, I just throw it in a pan or pot and cook offal until it looks kinda done, then eat.
Dinner tonight was a pound of calf's-liver, lightly cooked with a little olive-oil.

I grew up eating beef tongue (rich and tasty) and liver (yuck), and enjoy chicken livers as appetizers, usually wrapped with bacon.
I don't think I've ever eaten any of the others.
And don't feel insulting, I would never eat any of the ones you mentioned! LOL
