For Debsi - spaghetti alio I olio con pepperocini (onions, mushroom, clove)

Medium spaghetti (Barillia #5 works fine)
Cook al dente in plenty of salted water
Rinse - yes! If you do not you will end up with a stuck together clump of pasta at the end.

chopped garlic
ground pepper
chopped fresh hot peppers or dried (Do not use pepper flakes, if dried grind them in a mortar or soak and chop.)
olive oil

Whatever pleases your fancy. Yesterday I chopped the first green onions of the year and added them at the last minute. Have used fresh mushrooms, pesto, parsley, sautéed onions ... Chopped ham and it is a full meal.
For three helpings which makes two plus more - 4-5 cloves of garlic, 1/4 cup of oil plus whatever you want to add.

Gently heat olive oil and be very generous, add garlic, peppers, pepper, a dash of salt, when garlic is glassy add cooked pasta. Turn well, serve immediately, offer plenty of freshly grated Parmesan.

Freezes well and reheats well. Do serve the evening before you use the NY subway and you will have plenty of personal space.
