Yesterday, I sauteed a red pepper (that I'd julienned) and some sliced mushrooms (not together) to use in various things.
This morning, I thought, hmmm, I have some eggs and want to make something that I can use for a few lunches this week.
So with this:
7 eggs (that's what I had left)
1/4 cup milk
1 cup of shredded cheese (romano, mozzarella, provolone, and emmental)
2 cups fresh spinach (torn up and then sauteed)
half an onion (chopped and sauteed)
some of the mushrooms and red pepper that were already sauteed
salt and pepper
I did this:
In a big bowl, I whisked the eggs and milk with some salt and pepper. Dumped in the cheese and stirred. Dumped in the onion and spinach, along with some of the mushrooms and some of the red pepper, and stirred. Transferred it to an oil-sprayed baking dish, and then baked for approx. 30 minutes at 350 degrees.
Frittata lunches for this week! (I tasted it after it came out of the oven. Delicious!)
I try to make one of these once a month or so, it is a great way to use up any veg that needs to be used up, & any veg or cheese or meat combo will work. Sometimes I do the 2 minute one, its 2 eggs a spoon of yogurt, veg, cheese, mix in a microwave bowl, & microwave for 2 minutes. You can also bake them in a muffin pan if you wnat to be bale to just grab one for lunch on the way out..

I'm definitely going to do this more often! I'll try to stay on your schedule.
I work from home so lunches are supposed to be easy to manage. Somehow, though, they're not, so I snack instead.
I did the same thing. Grilled a ton of vegetables earlier in the week...red, yellow, orange bell peppers, onions, broccoli, mushrooms, zucchini...lots left over. I've been using it in frittata for the past couple of days. I do them stovetop in a skillet, though, versus baking them.

That's what I do. My SO takes a couple of them with him for breakfast on the way to work.

Yep, that's how I store them. Then you can just microwave them.

Looks delicious. I make these a lot and use what ever veggies I have left, sometimes if I have it add cooked bacon or diced ham or even salami.
