apples and onions are very nice with cabbage, a few rye seeds or grated fresh nutmeg are good if you like that flavor, and a dollop of sour cream on top once it's plated.
Kraut, potatoes, carrots, onions, garlic, S&P. My oma used to make a "Boiled Dinner". She didn't use kraut, but she did put meat in it. I suggested kraut to add some flavor to an otherwise bland dish. Might as well make "Stone Soup".
The only texture this adds is smoothness but I like to make cooked cabbage with a sharp cheese sauce. You can sprinkle the top with buttered bread crumbs or cracker crumbs and run it under the broiler for a little crunch.
Make your husband some plain ol' cabbage like he insists on, and then make yours any way you like it. Personally I love cabbage sauteed in bacon grease along with some onions and plenty of salt and pepper. Or boiled with a ham hock. Or with little pieces of bacon and/or ham in it, either boiled or sauteed. Dang, this is making me hangry, so I am going to make some sauteed cabbage TODAY. My husband loves it too.
Roasted wedges with olive oil, S & P and squeeze fresh lemon over it when it comes out.
If my husband dictated ridiculous dietary parameters he would be very hungry and lonely. You are not a toddler and can make your own decisions about what you want to eat. If he is a vegan eating a rare steak in front of him would be rude but it's unreasonable and unhealthy to simply have boiled cabbage for dinner 3 nights in a row. He sounds like a controlling jerk.
