I had to root around to find the ingredient list, but I verified that Williams’s products have no weird ingredients. It only has dried herbs and peppers. Which is the reason I chose the product, as I remember.

Penzeys chili seasonings will not have artificial ingredients in them either.

Well, for one thing, I can see that there are a lot of mixes I need to try.

I use a mixture of Penzey products, mainly Ancho Chili Pepper Ground, to which I add their cumin, chipotle, and garlic powder. I tried all their pre-mixed blends, but mine is the one I like best. It's something like 1/3 cup ancho, 1 Tablespoon cumin, 1 Tablespoon garlic powder, and 1 teaspoon chipotle. Aleppo pepper is good if you don't like the smokiness of chipotle. You can also add oregano if you like it. I don't, so I don't.

I like the French's as well (can't always find it so I have to get McCormack) - but I also add more seasonings as well as the packet.

Me Too

I've lived all over the U.S. and even in Texas people were simply amazed with my chili

I not only add ground beef but chunks of sirloin as well

I use pure chili powders, paprika, oregano and cumin to make my chili powder. There may be variations depending on available dried chilis.

Never seen the point... I always have 2-3 different kinds of dried powdered chile around, and cumin, and mexican oregano, and salt. I use fresh garlic and onion.

+1.

Also far cheaper, if you make chili very often. I have found that precision in balancing the exact amount of meat with the onions, garlic and chili powders makes a huge difference. Once you've found a balance you like, randomly varying the proportions makes for unpredictable results, often not good ones.

You can't adjust the amount of seasoning with packaged mixes unless you're willing to parcel out more from another packet. Mix your own and it's always right.

Yes and no. I don't have a particular one I use and I always doctor it up.

Sometimes I don't use one at all.

I thought the food forum would be one of the conspiracy theorist-free zones but I guess I was wrong.

Where are the "chemicals" here?
