I enjoy Pumpernickel bread with creamy cheese such as Camembert,herbal Boursin or Saint Albray cheese.
What also is tasty is home baked walnut bread with Fol Epi cheese or Saint Agur cheese with fig bread.Goat cheese with Bauernbrot/farmerbread or crispy bread.Sheep milk cheese with sesame crisp bread or Wasa crisp bread.Of course with any French cheese a warm sliced baguette is wonderful.
I always like the combination of fresh baked European bread,fresh butter and Swiss cheese slices sprinkled with chive.Served with tomato/cucumber slices,fresh herbs,red radishes,red Hungarian pepper slices.Apple,pear or grapes go so well with sliced or soft cheese varieties while cream cheeses taste great with banana/apple slices or strawberries.

But for me the most important 3 ingredients for a delicious cheese sandwich are :
1. fresh baked crusty
European bread
2.fresh salty butter
3.fresh cheese from a cheese store

Now I have craving for some cheese,bread and a glass of wine

If you are looking for recommendations on a grilled cheese sandwich, there are already good suggestions in this thread on how to achieve that. Definitely try them out!

If you are looking for a good cold cheese sandwich I have to throw in my vote for pimento cheese. It is so good!! In fact, it's what I had for lunch today. It's the best version of a cold cheese sandwich there is, in my opinion

Velveeta Original for grilled cheese sandwiches: that's the winner. Use butter with high butterfat content; Lucerne, the Safeway and Albertson's house brand, is great. Use a light, airy white bread.

Cooking it just right so the cheese is gooey is really important.

My fave is seeded rye bread with muenster, tomatoes and bacon. Only and always butter and make sure the cheese is on the outside so it melts. Second favorite is good old gruyere and ham with dijon on French bread.

I'll stick to "cheese sandwich." A grilled cheese is something different.

What makes a good cheese sandwich for me is any combination of a few cheeses, good bread, mustard, and shredded lettuce with Italian dressing or vinaigrette.

I'm a big fan of muenster--hot or cold. Growing up, we'd toast our muenster on bread in the toaster oven, then slap the two pieces together to make a sandwich. Sliced pepperoni was a favorite to add.

Simplicity!!!

Two slices of Arnold Thin-sliced white bread, two slices of LOL American cheese, a cold pan and one TBSP of olive oil. Put OO in the pan over med-low heat. Put the sandwich in and cook for 5 minutes. Turn and cook for 3 minutes more. Absolute perfection!!!

Never thought of using olive oil. Thanks, I'll try that next time. And one try mayo instead of butter like suggested up thread.
