The only time I use barley is in soup. I like barley, and since it is a healthy food, I would like to try it other ways....side dishes, instead of rice. I suppose I can look up some recipes, but would like to see some of your favorite uses for it.....breakfast, salads, side dishes. Thanks!

I sometimes cook it (and do the same with oats) like a pilaf. Toast it lightly in a pan and add chopped veggies, saute quickly and then add some chicken stock and cook until it's all absorbed. I like it that way.

Once in a while I make a pilaf with beef broth, mushrooms and onions. I love the chewy texture of barley.

My husband usually brings home barley tea and buckwheat tea when he's in various Asian countries. It has a nice toasty flavor.

I made this over the weekend: https://www.marthastewart.com/112288...chicken-barley

I tend to use boneless thighs instead of a whole cut chicken and cook it in my dutch oven instead of a slow cooker. Very little prep, and always turns out nice.

It does sound good. I also like boneless thighs, so I think I will put this on my to cook list. Thanks!

I make a barley and ham casserole that we really like.
Sauté an onion and a clove of garlic, add about 3/4 C washed and drained barley, stir for a few minutes in order to toast the barley a bit. Add about 2 C hot water and some black pepper. Simmer until barley is almost completely cooked. Add about 1C cubed ham and about 1 C frozen peas. Allow barley to finish cooking, about 5 more minutes.

That sounds very similar to a recipe I've made before: https://www.foodnetwork.com/recipes/...recipe-1973369

I usually make it as-is and add some peas or green beans to make it more of a one pot dish.
