I want to BBQ or cook a buried pig for the 4th of July.
I dig the 4th of July and like doing or being at a 4th of July party.
One of our best family friends raises pigs in the pnw, so the pork won’t set us back much.
We also have several friends from Somoa.
They have like the best buried pic recipe ever but it requires banana leaves.
Don’t think I can find many banana leaves in the pnw.
Is that even possible?
So I’m thinking about a rotisserie pig with a small dozen count of side dishes.
Can anybody give me some advice on this?

You can order fresh banana leaves on Amazon, among other sites. Have fun!

You can skip the in the ground thing by using a Caja China. Here if you dig 3' you'll hit water.

if by chance you cant get the pig....call a butcher shop up and ask for two whole bone in pork loins tied together ….. about 40lbs but it will yield at least 80%
the whole pig with the hide hide and hooves and lots of bone....about 50%
should be less than 2.00lb

You might also try a Latin market, even the ethnic section of a regular grocery store. We buy frozen banana leaves even though they can be grown here.


Check a BBQ supply store for the Caja China. They usually will rent them out for the weekend.

I haven't buried a pig, but a friend buried a huge beef roast. The roast was wrapped in foil and then wrapped in burlap. It came out great.

We use corn husks and corn stalks, but we do our roasting in the fall and not on July 4.

I live on LI in NY and we buy a whole pig cooked but it's cooked the same way the OP wants to do it. I don't have the time, energy or the resources to do it myself. It's delicious, we pick it up and carve it ourselves. Last year I think we paid $300.

Our church used to do this every fall for a potluck dinner. They just had a huge pit with a lid on it. Later in the cooking, they covered it with foil. Great taste!!
