I do mostly root veggies , they do take a while ,plus it takes 2-3 batches at get a good serving for 6 people as they have to be spread out otherwise they’d steam instead of roasting .

I roast just about every vegetable....but love to read others experiences. My go-tos are roasted asparagus, green beans, onions, okra or Brussels sprouts. At times will toss them in oil then coat with Panko and parmesan for a crispy coating....

I found recipes for roasting leeks. I’ve seen leeks in stores. So before it gets too hot to run the oven, I’ll give it a go.

It is probably mentioned here someplace, but if not radishes are great roasted. I think if is amazing what an how we prepare foods compared to our parents, grand parents and others 50 or more years ago.
Yesterday I ventured off to the farmers market (a very small one close by) my full intent was to get some fresh beets and baby carrots, but they had neither. Apparently all our rain has caused them to rot. I did get some really nice turnips and they will go in my roasted veggie or grilled veggie dish tonight.

I agree that we think of veggies, and prepare them, differently than our mothers and grandmothers did. One hopes that we are practicing healthier cooking. It certainly is more varied!

Someone has posted about roasting radishes. I have not tried it, but it sounds intriguing.

Yes I have roasted leeks and they come out caramelized and yummy. I have roasted cabbage too and cauliflower.

I love the taste of roasted vegetable.But especially like roasted halved red radish sprinkled with Mediterranean sea salt,olive oil,honey and lemon juice.
