So I made one that involves marinated cherry tomatoes, roasted haricot vert, feta, kalamata olives, Persian cucumbers, roasted peppers and chickpeas with Greek-style seasoning and a red wine vinaigrette. It came out GREAT. But now I'm trying to think of other combos I could do...
So far, I just have an idea for roasted beets, walnuts, goat cheese, roasted green beans with a balsamic vinaigrette. My roommate has suggested southwest style, but I'm not as enchanted with that.
