I am in a bit of a conundrum here. I have come in to a whole mess of bananas, and need to utilize them quickly.
I have a decent banana bread recipe but my other conundrum is I'm trying to lose weight, so I'm trying to cut out carbs as much as possible so.
With that in mind, are any of you aware of a recipe for banana bread that the "bread" portion of the recipe is mostly bananas?
Is that even possible? I don't care (I don't think) if it's a little more "wet" than your typical banana bread with flour, but I would sort of like something I could slice/wrap in plastic wrap to bring with me to work.
You could slice them, & freeze the slices, & have one or two slices as a frozen treat at night. If you make banana bread, it doesn't seem in line with a diet.
2 ripe bananas
1 cup finely chopped almonds
1 tbsp oil
3 eggs
pinch of salt
1 tsp baking powder
1/2 tsp cinnamon
more nuts of your choice or even dried fruit,bitter chocolate chips or blueberries
Put in greased muffin forms or in a bread form and bake in 338 F oven about 35 minutes pending on your oven.

You can freeze the bananas whole, assuming you have room, and then use them for bread, muffins, smoothies, etc. over time. Defrost them for baking, using the liquid they exude while defrosting as part of the liquid for your recipe.
I have a recipe for a frozen dessert using ripe bananas, crushed pineapple, maraschino cherries, sour cream, sugar and pecans, but since you are dieting?? Let me know and I'll find if you want.
OR you could make real banana bread (or banana nut bread, my favorite) for when you are eating like a normal person again. It freezes very very well.
(And honestly, even when on a "diet," one small slice of banana bread won't kill you, I swear!)
