We do a salad that involves peeling and thinly slicing the cukes.

Then salt them liberally and let sit to get the excess water out. Rinse well and "squeeze" dry.

Put in a bowl with a splash or two of red wine vinegar and mix with sour cream.

I like to take cukes and halve them lengthwise, scoop out the seeds, slice, salt and place in colander to drain liquid for a bit. Mix with sour cream, thinly sliced onion, and garlic mashed into a paste.

I cut cucumbers into slices or chunks, add chopped tomatoes, [you can put in onion if you want] add buttermik dressing, let it 'marinate'. This is really good, and I am going to try putting some blue chees in the next time I make it-seems like it would go perfectly with those flavors. You can reduce the fat content by stirring in some fat free sour cream to dilute the buttermilk dressing some.

1 cup mayonnaise
1/4 cup sugar
1/4 cup vinegar
1/4 teaspoon salt
4 cups sliced cucumbers
1 small onion (sliced thinly)
In a bowl, combine mayonnaise, sugar, vinegar and salt. Add cucumbers and onions; stir to coat. Cover and refrigerate for 2 hours. Yield: 6-8 servings.

My kids loves this as my husband too.
Peel the cucumber slice in 1/4 inch thick and squeeze a lemon,sprinkle at little bet of olive oil,salt, pepper and garlic salt and stir. Let sit for 5 minutes and enjoy.It is good summer salad.
