This was a winner at chez gentle last night. Just a few ingredients, and ready in 20-30 minutes. It will be in the permanent rotation. Use a full flavored sausage, since there are no other added herbs or spices.

Gnocchi Soup

1# Italian sausage (I like Jimmy Dean)
1 15 oz can diced tomatoes
32 oz. chicken broth
16 oz dry pack gnocchi (not frozen)
6 oz fresh spinach (a couple of handfuls)
Pepper
Parmesan cheese (optional)

Brown the sausage. Add tomato, black pepper, and broth. Simmer for about 10 minutes. Add gnocchi and cook according to package instructions, until they float (2-3 minutes). Toss in spinach and simmer another minute or two.

Serve with Parmesan cheese.

I made this today.. definitely a keeper. I used Sweet Italian (aren't all Italians sweet? ;-)) chicken sausage, which is the sausage I usually use and it worked very well.
