6 Macintosh apples peeled and sliced
2 tsp cinnamon
5 tbsp sugar (mix together with cinnamon and sprinkle over cut apples and let stand)
3 cups sifted flour
2 cups sugar
1 cup vegetable or canola oil
4 egg beaten
1/4 cup orange juice
3 tsp baking powder
2 1/2 tsp vanilla extract
1 tsp salt
Directions:
place flour, sugar, oil, eggs, OJ, baking powder, vanilla and salt in a bowl. Beat until smooth.Grease and flour a tube pan (angel food cake pan) Pour half of the batter in the pan and then arrange half of the apple mixture on top of it. Add remaining batter, and then top with the rest of the apples. Bake in a pre-heated 350 degree oven for 1 hour. allow cake to cool in an upright position before unmolding.

Simply delicious apple cake:
2 cups sugar
1/1/2 cups veg oil or light tasting olive oil
3 cups flour
1 tsp salt
1 1/2 tsp cinnamon
1/4 tsp nutmeg
1 1/2 tsp vanilla extract
3 cups apples peeled,cored and sliced
3 eggs beaten
1 1/2 tsp baking soda.
Preheat oven to 325 degrees. Mix all ingredients together thoroughly. Batter will be thick. Pour into a greased Bundt pan. Bake 90 minutes. Mine actually baked 15 minutes less. I know it seems like a long time to bake but trust me it comes out moist and delicious. I have made this several times and actually like it better than the other recipe I posted.
I wish I could find Macintosh apples mentioned on OP. It seems that nowadays stores carry only hard, crisp apples and Gala rules everywhere (not suitable for a tasty apple cake anyway).

I used honey crisp this time and the other 2 times before on the 2nd recipe. Came out great. I haven't made the first recipe in a long time because the last time I made it did not cook all the way through and I baked it a little longer than directed so I got annoyed and started making this one also from the same apple book.
Those recipes have so much oil! I hate to put that much oil in a cake.
so put less . Or use applesauce in place of the oil. Let me say this it may seem like a lot of oil but the cakes are very moist. I thought it was a lot of oil too but it really isn't. There is a lot of batter in both cakes.
it's not like boxed mixes where only 1/2 cup is used.
