I have been doing the same thing for years.....making too much spaghetti. Besides, just warming in up, or tossing it, I would like to try something new. I know I can google it, but I would enjoy, reading some of the ideas you may have.

Whip up a veloute with 1/2 milk, 1/2 chicken stock; add small container of sour cream. Throw spaghetti in a casserole with leftover chicken or turkey, peas, red pepper, cover with sauce, top with bread crumbs and Parmesan. Bake @350 45 min or so.

A couple of weeks ago I saw Hugh Fearnley-Whittingstall fill a soufflé with leftover spaghetti, bacon and peas. Looked delicious, haven’t made it yet.

My daughter likes to chop it up, throw it into a skillet with some butter and fry it.

Reheat in melted butter and toss with parmesan cheese. Toppings are endless.

Mix with egg, bread crumbs, and cheese, season, and fry into spaghetti cakes.

go asian for something different -- make a dressing of soy, lime juice, a bit of sesame oil, add scallions and chopped carrots, perhaps some chopped steamed broccoli and sesame seeds if you like them. Serve cold -- makes a nice side for grilled fish or chicken.

Cut into 3-4 inch pieces and added to a pot of sautéed (in olive oil) onions and garlic. Add a drained and rinsed can of beans if you want. Top with black pepper and parmesan.
