5 six inch flour tortillas
1 lb. lean ground beef
1 small onions chopped
1 green Chile chopped
1/2 tsp chili powder
1/2 tsp baking powder
3 Tbsp. flour
4 eggs beaten
1 cup shredded cheddar divided
1/2 cup milk (skim, whole, low-fat whatever you have)
1 Tsp chopped chives

brown beef and onion and Chile pepper in a skillet on medium heat. Break up the meat so it makes crumbles.
drain meat place in a bowl and add 1/2 cup cheese and mix well. In another bowl beat eggs, chili powder, flour, baking powder and milk together.

Spray a pie plate with cooking spray, place tortillas in pie plate and arrange then so they kind of fan out.
add beef mixture, then pour egg mixture on top. sprinkle with chives and remaining cheese. Bake on 350
for 45 minutes or until set. cut into wedges.
