I think the only somewhat universally available kinda raw kraut is Bubbies. I'm pretty sure that the Boar's Head is pasteurized. But as is said...very easy to make it yourself.
This comes in a bag and it's in the boutique chilled cheese section. I'm only interested in sauerkraut for the supposed health benefits which as I've read are not contained in commercial kraut.
The only sauerkrauts that are loaded with enzymes and probiotics are those that are raw and unpasteurized.
Pasteurization kills bacteria/microorganisms.

Even my BH, who doesn't care much for sauerkraut loves it. Don't know about probiotics, but ingredients are listed as
"Organic Green Cabbage, Organic Caraway Seed, Organic Juniper, Sea Salt"

I don't think they have a non-organic version
Generally it will state on the package 'probiotic' as a selling point. Since that doesn't contain vinegar, just sea salt, it may be brined and possibly probiotic if it wasn't heated prior to packing.
Most sauerkraut in stores are not naturally brined. Wildbrine (I found at Costco) and Bubbies are definitely brined and probiotic.
