I need a variety of meatloaf recipes, uncommon meatloafs preferrably. Give me your best & here's mine::::
One egg slightly beaten in bowl. Add 1 TBSP. onion soup mix, 3 TBSP. ketchup, 1 TBSP. mustard & salt & pepper to your taste of course (I use Slap Ya' Mama Cajun Seasoning). Crumble in one pound of ground beef & 3/4 c. of breadcrumbs (I've done everything from crushed Ritz to find bread crumbs).
Mold that guy into a microwave safe dish, slap some waxpaper on top & let it do the microwave thing for about 10-12 min.
In the meantime, mix another 5-6 TBSP. ketchup, 4 TBSP. brown sugar, 1/2 c. granulated sugar & just enough vinegar to make a sauce. Cut up a bell peppers in whatever shape you like & lay them all pretty on a microwave safe plate.
Yeah, this is where it gets interesting!!
Take your meatloaf out of the dish, I use 2 spatulas to get as little grease as possible. Lay it on top of the peppers, cover with sauce & microwave another 3-5 min. until no more pink in middle. Save a bit of sauce for serving.
And this is Sweet & Sour Meatloaf. Yum.
I made meatloaf for the very first time last week:
Meatloaf Mix (beef, pork, veal)
1 box stouffers seasoned stuffing (i used italian)
1 egg
As far as the grease goes - I molded it myself - lined my broiler pan with aluminum foil (release of course) and poked holes in sporatically. No extra grease!
Pot Roast Meat Loaf
1 and one half lb lean grd h.b.
1/2 cup milk
1/3 cup seasoned bread crumb
1/4 cup catsup
1 teaspoon salt
2 teapoons worcester sauce
1/4 tsp pepper
mix all together in bowl peal and half 3 potatoes cover with foil silghtly 1/3 cup of seaasoning. 375 for 60 min. I do the meatloaf alone in a meatloaf pan and take the foil
off the last 10 min. it does taste good. you also can in a big over safe dish add the potatoes seasoned, an carrotts sliced and put tinfpoil on the bottom with olive oil or the spray butter. oh I also grease the hamburg tin with butter spray. or butter.

mini meat loaves
1/2 cup ketchup,1and1/2 tablespoon dijon mustard, 1lb grd sirloin,1/4cup finley chopped onion, 1/4 cup seasoned breadcrumbs,1/2 tsp salt, 1/2 tsp oregano, 1/8 tsp pepper 1 large egg beaten. cooking spray. heat over to 400 combine ketchup, mustard stir with wisk reserve 2 and1/2 tablespoon of ketchup mixture. combine remaining ketchup mixture with the beef and the next 6 ingredients(beef trrough egg) in large bowl stirring to combine. divide beef mixture into 4 equal portions. shape each portion into 4x2 1/2 inch loaf place loafs on jelly roll pan coated with the cooking spray. spread about 2 tsp reserved ketchup mixture evenly over each loaf bake at 400 for 25min or until done.
you could serve with mashed or baked potatoe.

DINER MEATLOAF (warning, baking time is 1 hr. 45 mins. It takes this long for the glaze to reduce)
Preheat oven to 350
Prepare SAUCE and set aside:
Combine until sugar is dissolved:
8 oz. tomato sauce
1 T. yellow mustard
2 T. vinegar
1 c. water
2 T. brown sugar
MEATLOAF
Mix together:
1 1/2# ground beef or a mixture (pork, venison, bison, whatever)
1 c. dry bread crumbs
1 med. onion, minced
2 eggs
8 oz. tomato sauce
salt & pepper
Place in a large baking dish (13x9 or bigger). Bake for 15 minutes. Pour sauce over and bake for 1 1/2 hours. Baste with the sauce a few times during cooking. The sauce will reduce and form a yummy glaze.
1 1/2 lbs. Ground beef
2 lg Eggs
1 c. Bread crumbs**
1/2 jar Spaghetti sauce w/mushrooms
1/2 c. Onions, chopped fine
1 3/4 c. Mozzarella cheese
2 t. Sweet basil
2 t. Oregano
2 t. Parsley
Mix all ingredients together except cheese. Pat out onto a piece of foil into a flat thin (about 1/2") loaf in a rectangular shape. Sprinkle with 1 c. cheese over entire top of loaf. Using foil to lift by, roll up loaf like a jelly roll. Seal all ends and edges together, place seam side down in pan. Bake at 350° covered with foil for 35 minutes. Then finish baking uncovered for 15 minutes. Remove from oven add remaining cheese and the other 1/2 jar of sauce over top; bake for an additional 10 minutes.
**may use more if needed to hold ground beef together
Let this meatloaf sit about 5-10 minutes before slicing. Caution!!!! The cheese on the inside is very heat hot so let it cool a bit especially if giving to children please.
1 lb ground beef
1 lb ground pork
2 eggs
1/2 C ketchup
1/4 C wine
1 C onion, diced
1/2 C oatmeal
1/4 C minced garlic
1 T oregano
1 T basil
1 T parsely
1 t black pepper, ground
1/2 t sea salt
1/2 t cinnamon
Combine the ketchup and wine - then set aside.
Mix everything else together. Add enough of the ketchup/wine mixture to make it come together - usually about half. Form into a loaf on a cookie sheet and drizzle the rest of the ketchup/wine mixture on top of the meatloaf. Bake in an 350 oven for just under an hour.
I use a mixture of 1lb ground beef, 1/2 lb pork and 1/2 lb. veal
when well mixed, I add:
1 egg
dash or two of worchestershire sauce
salt, pepper (fresh ground)
garlic powder
onion powder
Italian seasonings
very fine Ritz cracker crumbs
and ketchup on top
bake for 35 minutes.
I do the same as most of ya but dosent anyone else put diced Green peppers and onions in it? Then I put strips of onion and green peppers on top of the glaze.
Our favorite meatloaf recipe is the one on Martha Stewart's website. It was her mother's. It makes a lot, so I usually split it into two and freeze one for later.
