YLisa, that's a great story on the "gifts of canned tuna". What a fantastic gift. Talk about getting spoiled! The funny thing about tuna, is that once you've had home-canned, it's nearly impossible to eat store-bought tuna. Out here on the west coast, there is a company called Nelson's Crab, who does a tuna that is as close to home-canned tuna as you can get. They are much cheaper than other "gourmet-100% albacore" tunas and again, are JUST like home canned tuna. It's not that nasty old ground up, twice cooked stuff sold in stores. The cans are hand packed with raw tuna, which is then processed.

As for the cranberries, I've got some of those marvelous pans that have 4 large mini loaves each. I did 8 loaves (2 pans) of a new cranberry bread recipe that I found online. The flavor was FAB, but I didn't like the crumbly texture. Sad... LOL The rest of them got washed, sliced, measured and put into freezer bags for later use. I'm still going to pick up probably another 10-20 lbs, just for canning. Someone told me about a SIMPLE cranberry jelly/jam recipe that they make and I'm dying to try it.

First I had a church board meeting, now I am home and you can see how hard I am working....
I was worried about not having lids, etc for the fall and winter months, Wal Mart carries them on their site year round, you can do the site-to-store thing and not pay shipping.

I made up the recipe, as I didnt have everything that I would use for beef stew....I used tomato sauce for the liquid to tenderize the venison.
Needless to say, I dont even wanna look at anymore venison for awhile.

And roast pumpkins.

Way to go OG! We put 36 cups of pumpkin in the freezer and some more razor clams, but I think we're done here.....for the most part. We'll see. I may have to do up some stew here a bit later on. LOL

Well, a bum knee and a clogged basement drain put those canning plans on hold for another weekend. Grrrrrr. Good thing apples keep!
