Tomatos are done in my waterbath, salsa as well. My Apple butter cooks in the crock pot as well. and does not call for waterbathing after...never had a Issue

how did you cann your Sweet potatos?

Still looking for a Canner....... good things come to those who look and search forever lol

I don't pc my tomatoes either
I was the jars (in the sink, don't have a dishwasher)
cut tops out of tomatoes
drop in blender (with peelings on)
after blending, put in pan on stove top
boil, when it's boiling
boil in small pan the flat lids
pour tomatoe juice in jars, put on flat lids and place on towel on counter and repeat

usually have 2 pots of tomatoes boiling and I'm blending several at a time to put in the pans to boil

last year I canned lots of corn that I cut off the cob
I did pressure cook that and I think I did it too long, the corn taste a little scorched when I get it out of the jars

I found a new canner locally and it was the cheapest for new that I've found. It's a Presto 16 Qt. Canner for $82.95. I found a used one for $20.00 on Craigslist and a bunch of canning jars for .25 and .50 each. Unfortunately they are about 3 hours away from me. I'll keep looking. I also found a bunch on Ebay. Good luck.

You don't process these either? I'm glad you have never had a problem but for me I need to process to make sure those lids are sealed and the food was processed for the correct amount of time. Do you just keep all these unprocessed jars on your shelves or do you keep them in the fridge?

oh gosh, can't put them in the fridge, I did over a 100 quarts of tomato juice and tomatoes one year
I put them on a shelf outside in the well house
never had a problem with them

my husband took some eggs to a friend and they were setting up things in the garage with the neighbor for a yardsale this weekend
my husband looked throught their stuff and bought a pressure cooker, 22 quarts
it's brand new, still has all the stuff in the plastic bag when I opened it up
I already had an 18 quarts

Great find! I use to have a pressure canner I could stack quarts in so I could do 14 qts at a time. I miss that canner but it got to heavy for me to move it and burned my underarm on it more times than not getting the jars out of it.

Tomatoes have an acid that helps them to not spoil. I water bath mine, but do not pressure them. Also, I add a touch of vinager to mine as well as salt.
