I have not made it....I will look it up and post it.....it's in a church cookbook.

I can't believe it....I went to hunt and found the recipe in the second cookbook....LOL

Pinto Bean Pie

1/2 cup warm mashed pinto beans
1 stick melted margarine
1 1/2 cup sugar
2 eggs
1 tsp vanilla
1/2 cup coconut

Beat eggs and mix with other ingredients. Pout into unbaked pie shell. Bake 1 hour at 350 degrees F. Pecans may be added if desired.

I was wrong on the cookbook...it's from the Homemakers Club of Hart County Kentucky 1977 -1978

I don't know if I've posted in this thread and I can't be arsed to search and find out. So here's my recipe for baked apple crisp (yes, it's a pie - a crustless pie, dangit):

In a pie tin (see? it's a pie!), layer 3 medium peeled sliced granny smith apples and 2 large peeled sliced mcintosh apples.
Alternate one type of apple, then the other, and start with the granny smith on the bottom.

Squeeze a 1/4 of a lemon over the whole thing, or you can squeeze a little bit each time you set down a layer of the mcintoshes.

In a bowl, make the crumble top by loosely mixing:
a cup of oats - whole is best, quick if you don't have whole, never instant.
half cup of compacted DARK brown sugar.
1/4 cup of flour - white or unbleached, whatever you prefer.
1/3 stick of butter, liquified - no substitutes.
a tablespoon of powdered cinnamon
1 capful of vanilla extract

PRESS the crumble over the top of the apples.

Bake at 325 for around 1/2 hour.

Serve warm with a scoop of vanilla ice cream on the side
