Per request, this is the recipe my daughter serves for holiday dinners. It's not her own recipe but she no longer remembers where she got it.

10 medium russet potatoes, peeled and diced
1/2 lb bacon
2 large sweet onions, chopped
1.5 cups cubed cheese (cheddar, colby or preference)
1.5 cups mayo (heart attack!)
salt and pepper

Boil potatoes for 5-7 minutes (still firm). Cook bacon and reserve 2 tbsp drippings. Sauté onions in bacon drippings. Crumble bacon and add onion, cheese, mayo, salt and pepper to taste. Mix with potatoes in large casserole dish and bake at 325F for 60-70 minutes. Yields eight servings.

OMG! I have to make this. Almost like a loaded baked potato salad.

That sounds so good. I'll add this to recipes to do.

The version of that, that I have calls for sour cream instead of mayo (talk about heart attack!), cheese, green onions and garlic. No bacon. I save the potato skins, and use them to stuff some of the potato mixture with, when it's done.

Oh, yum. Trashy comfort food! Sometimes it's just what the Dr. ordered.


Seems like a lot of families have some version of this.

This week I found a little more dignified version and made it with a meat loaf But it's just as indulgent, full of unneccesary calories and provided the sufficient guilty satisfaction.

A once in while treat.

No cheese or mayo for me, uh uh.

My version of a heart attack meal was a mix I made when I was 20 yrs old. Potato chunks, diced onions, one pound of bacon, and 6 eggs, fried in that order and then combined to make a giant scramble. My boyfriend and I ate the entire skilletful!

I remember this, but I had it with ground beef instead of bacon. It was called "cowboy stew".
