Hi SmokyMtnGal

My restaurant was in Harahan, Louisiana. Just west of New Orleans in Jefferson Parish. Hurricane Katrina did me in, lost the roof and my landlord did not rebuild the place for about six months.

That's Ok though as I went back into construction and did well. My wife and I have land in Abita Springs across the lake and we will be building a home in the next few years. After the home is complete I will open a new Italian restaurant clost to Abita Springs.

I'm from CA and the buttermilk is a new idea to me. We have always used beaten eggs with a little milk to wet the chicken...don't soak it...just dip it and then rolled the chicken in the other ingredients that Smokmtngal mentioned. Always used Crisco. Been so long since I've maded fried chicken...not healthy you know. But I think I'll make it tonight. Tired of the shake & bake.

My grandmother always used buttermilk when frying her chicken...she said the buttermilk was the "key" to good fried chicken! She was a yankee too! I have never made my fried chicken that way because I never knew how she did it exactly! I just always dredged mine in eggs/salt/pepper and then in flour. Then I placed it in hot oil. I am now going to use Smokeymountaingals recipe...sounds just like my "grammy's" recipe!
