I have a spice cake box mix, and am wondering what I could add to it to make it different from just a cake or cupcakes. Searches have come up with just applesauce mix-ins.

A boyfriend's mom awhile ago used to make a rhubarb cake, that was pretty much a spice cake mix with rhubarb in it. It was delicious! Does anyone have a recipe for something like that? I have never even seen rhubarb and have no idea if there are certain parts you can/can't eat, or if it's all good, etc.

Any other mix-in ideas would be helpful too.

You could use puréed prunes, zucchini, carrots, etc. After all, a carrot cake is just a spice cake, too. Do not use chicken liver, though.

Any kind of chopped fruits and/or nuts, raisins, dried cranberries, and so on. Plus carrots, grated zucchini, etc. And coconut frosting is good.

rhubarb is like celery on steroids, with red and/or green stalks. You can eat the stalks - most people cook them, but I think I remember reading that the leaves are poisonous. Correct me if I'm wrong, folks. Wouldn't want to spread food rumors! I bet it would be ok in spice cake. Not sure how well it would cook, tho.

The leaves are poisonous, they are high in oxalic acid. The stalks are wonderful stewed or in cherry or apple or strawberry pies. Or on coffee cake or in muffins. Anyplace you can use apples, grapes, or cherries, you can use rhubarb - it just needs a bit more sugar.

I like banana and walnuts in mine. Mash two really ripe bananas (the darker the skins, the more pronounced the banana taste will be) and add to mix along with 3/4 c. walnut pieces and 1 Tbs vanilla. Other than that, don't alter box directions. Makes for a heavy but moist and delicious variation
